When a classic pasta alla vodka gets sober-curious, it’s just as delicious. We’re using white balsamic vinegar to give that twangy intensity to a rich rosée sauce. And we’re tossing in nibbles of ground pork for extra sustenance amidst a generous portion of fresh conchiglie.

  • 3 Garlic cloves
  • 1 Head of curly leaf lettuce
  • 2 Cucumbers
  • 30ml Tomato paste
  • 225g Fresh conchiglie pasta
  • 30ml White balsamic vinegar
  • 60ml Heavy cream

Preparation

Cook the sausage meat

  • Bring a medium pot of salted water to a boil.

  • Halve, peel and mince the shallot.

  • Mince the garlic.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the shallot, garlic and sausage meat*. Cook, breaking up the meat, 4 to 6 min., until golden brown and cooked through.

Boil the pasta

  • Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.

  • Boil, 3 to 4 min., until al dente.

  • Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Make the salad

  • Meanwhile, roughly chop the lettuce.

  • Thinly slice the cucumbers crosswise.

  • In a large bowl, combine the vinegar, 3 tbsp oil (double for 4 portions) and S&P.

  • Add the lettuce and cucumbers; toss well.

Make the sauce & combine the pasta

  • To the pan, add the tomato paste. Cook, stirring often, 1 to 2 min., until dark red.

  • Add the cream, reserved cooking water and S&P.

  • Cook, scraping up any browned bits, 2 to 3 min., until thickened.

  • Add the pasta and 2 tbsp butter (double for 4 portions).

  • Cook, stirring often, 1 to 2 min., until the pasta is combined.

Plate your dish

  • Divide the pasta between your bowls.

  • Serve the salad on the side. Bon appétit!
