Roasted Chicken Drummies
with Apple-Beet Salad & Crispy Potatoes
File under Things Kids Like! This recipe features two irresistibles: BBQ sauce and Caesar dressing. That means the chicken is finger-licking material, and the salad is deliciously creamy and crispy, thanks to morsels of apple and celery in the mix.

- 90ml BBQ sauce
- 90ml Caesar vinaigrette

Preparation

Roast the chicken
- Preheat the oven to 450°F. Bring a large pot of salted water to a boil.
- Pat the chicken* dry; season with ¼ of the spices and S&P.
- Arrange on a lined sheet pan and roast, flipping and brushing with the BBQ sauce halfway, 30 to 35 min., until cooked through.

Roast the potatoes
- Meanwhile, cut the potatoes lengthwise into ½ inch wedges.
- On a second lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P.
- Roast, flipping halfway, 25 to 30 min., until browned and tender.

Boil the beets
- Meanwhile, peel and medium-dice the beets.
- Add to the pot of boiling water and boil, 15 to 20 min., until tender.
- Drain and rinse under cold water; pat dry.

Mise en place
- Meanwhile, thinly slice the celery crosswise on an angle.
- Core and medium-dice the apples; toss with a splash of the vinaigrette to prevent browning.

Make the salad
- In a large bowl, combine the apples, celery, remaining vinaigrette and S&P.
- Add the beets.

Plate your dish
- Divide the chicken, potatoes and salad between your plates. Bon appétit!
