Protein Swap | Sheet Pan Chicken Breast Yakitori
with Sesame Sweet Potatoes & Cucumber Salad
The salty sweet flavours of these prized Japanese skewers shine through, except the usual grilling technique is streamlined for the sheet pan. Chicken breasts roast alongside wedges of sesame-spiced sweet potatoes, while a crisp ponzu-dressed cucumber salad refreshes between bites.

- 2 Canadian-raised chicken breasts (air chilled)
- 2 Scallions
- 450g Sweet potatoes
- 3 Cucumbers
- 30ml Ponzu lime sauce
- 30ml Teriyaki glaze
- 6 Bamboo skewers
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper)

Preparation

Start the sheet pan
- Preheat the oven to 450°F.
- Cut the sweet potatoes lengthwise into ½ inch wedges.
- On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.
- Roast, 7 to 9 min., until partially cooked.

Finish the sheet pan
- Meanwhile, in a small bowl, make the sauce by combining the teriyaki sauce and ½ the ponzu.
- Pat the chicken dry and cut into bite-size pieces. In a medium bowl, toss with the remaining spices, ½ the sauce and S&P.
- Thread the chicken onto the skewers, leaving 1-inch free on the bottom.
- When the sweet potatoes are partially cooked, flip and add the skewers.
- Roast, flipping and brushing the chicken with the remaining sauce halfway, 15 to 18 min., until the chicken* is cooked through and the sweet potatoes are tender.
- Switch the oven to broil, 2 to 3 min., until beginning to brown.

Make the cucumber salad
- Meanwhile, thinly slice the scallions crosswise.
- Small-dice the cucumbers.
- In a second medium bowl, combine the cucumbers, scallions, remaining ponzu, a drizzle of oil and S&P.

Plate your dish
- Divide the sheet pan between your plates.
- Top with the cucumber salad. Bon appétit!
