This works for Meatless Monday, Taco Tuesday or any day you need a fun 20-minute fix for the family. The trick is to melt mozzarella onto the tortilla shells first, and to use sour cream and Mexican-spiced sautéed sweet pepper for a full-bodied slaw.

Preparation

Mise en place

  • Preheat the oven to 450°F.

  • Halve, core and thinly slice the sweet pepper lengthwise.

  • Juice the lime.

  • Reserving the liquid, drain and rinse the black beans.

Sauté the sweet pepper

  • In a large pan, heat a drizzle of oil on medium.

  • Add the sweet pepper and sauté, 1 to 2 min., until beginning to soften.

  • Add ¼ cup water½ the spices and S&P.

  • Cook, stirring occasionally, 6 to 8 min., until softened and browned.

Make the refried beans

  • Meanwhile, in a second large pan, heat a drizzle of oil on medium.

  • Add the black beans, remaining spices and ¼ cup of the reserved bean liquid.

  • Cook, stirring occasionally, 2 to 3 min., until the beans are warmed through; mash the beans lightly.

  • If the mixture seems dry, gradually add the remaining bean liquid until you achieve your desired consistency; season with S&P.

Warm the tortillas

  • Arrange the tortillas on 2 lined sheet pans.

  • Sprinkle with the cheese.

  • Bake, 3 to 5 min., until the cheese has melted.

Make the slaw

  • In a large bowl, combine the cabbage, sweet pepper, lime juice, sour cream, a drizzle of oil and S&P.

Plate your dish

  • Divide the tortillas between your plates.

  • Spread with the refried beans.

  • Top with a spoonful of the slaw.

  • Serve the remaining slaw on the side. Bon appétit!
