Melty Cheese Tacos with Refried Beans
Creamy Sautéed Sweet Pepper Slaw
This works for Meatless Monday, Taco Tuesday or any day you need a fun 20-minute fix for the family. The trick is to melt mozzarella onto the tortilla shells first, and to use sour cream and Mexican-spiced sautéed sweet pepper for a full-bodied slaw.

- 1 Sweet pepper
- 796ml Black beans (canned)
- 120g Grated mozzarella
- 86ml Sour cream
- 12 Wheat flour tortillas
- 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, tapioca starch, coriander seeds, black pepper, cumin, onion, oregano, citric acid, cellulose, lime oil)

Preparation

Mise en place
- Preheat the oven to 450°F.
- Halve, core and thinly slice the sweet pepper lengthwise.
- Juice the lime.
- Reserving the liquid, drain and rinse the black beans.

Sauté the sweet pepper
- In a large pan, heat a drizzle of oil on medium.
- Add the sweet pepper and sauté, 1 to 2 min., until beginning to soften.
- Add ¼ cup water, ½ the spices and S&P.
- Cook, stirring occasionally, 6 to 8 min., until softened and browned.

Make the refried beans
- Meanwhile, in a second large pan, heat a drizzle of oil on medium.
- Add the black beans, remaining spices and ¼ cup of the reserved bean liquid.
- Cook, stirring occasionally, 2 to 3 min., until the beans are warmed through; mash the beans lightly.
- If the mixture seems dry, gradually add the remaining bean liquid until you achieve your desired consistency; season with S&P.

Warm the tortillas
- Arrange the tortillas on 2 lined sheet pans.
- Sprinkle with the cheese.
- Bake, 3 to 5 min., until the cheese has melted.

Make the slaw
- In a large bowl, combine the cabbage, sweet pepper, lime juice, sour cream, a drizzle of oil and S&P.

Plate your dish
- Divide the tortillas between your plates.
- Spread with the refried beans.
- Top with a spoonful of the slaw.
- Serve the remaining slaw on the side. Bon appétit!
