Ground Turkey Yuk Sung
with Edamame, Sweet Pepper & Sesame Seeds
Lay it all down on tender lettuce leaves, and let yourself indulge in soft, yummy yuk sung. These Chinese-style wraps are served up in just 10 minutes. Gently browned ground turkey has all the sustenance you need, delivering sweet and salty sensations when swirled with a signature spice blend, ponzu and sweet soy sauce. Sautéed edamame beans and sweet pepper offer a fine fix of veggies. Conclude with a well-aimed scattering of sesame seeds.

- 1 Boston lettuce
- 50g Edamame (or green peas)
- 30ml Ponzu lime sauce
- 30ml Sweet soy sauce

- 13g Savoury Seoul-Style spices (sea salt, brown sugar, white sesame seeds, garlic, sunflower oil, paprika extract, ginger, black pepper)

Preparation
Start the turkey
In a large pan, heat a drizzle of oil on medium-high. Add the turkey and ½ the garlic; season with ½ the spices and pepper. Cook, breaking up the meat, 3 to 5 min., until partially cooked.
Mise en place
Meanwhile, separate the lettuce leaves, discarding the root end. Core and thinly slice the sweet pepper.
Sauté the vegetables
In a medium pan, heat a drizzle of oil on medium-high. Add the remaining garlic, the sweet pepper, edamame and remaining spices; season with pepper. Sauté, 2 to 3 min., until softened.
Finish the turkey
To the pan of turkey, add the soy sauce, ponzu, demi-glace and ¼ cup water (double for 4 portions). Cook, stirring occasionally, 2 to 3 min., until slightly reduced and the turkey* is cooked through.
Plate your dish
Divide the lettuce leaves between your plates. Top with the turkey and vegetables. Garnish with the sesame seeds. Bon appétit!
