Grilled Sesame Butter Chicken
with Asian-Style Market Vegetables
Triple sesame action gives this recipe incredible depths of flavour and protein. Sesame oil, toasted sesame seeds and sesame butter (that ingeniously blends tahini, lime and ginger) are all destined for a feast of barbecue-grilled chicken breasts, Asian greens and portobello mushrooms.

- 2 Canadian-raised chicken breasts (air chilled)
- 225g Asian greens (yu choy or gai lan)
- 3 Portobello mushrooms
- 1 Lime
- 15ml Ginger paste
- 15ml Tahini
- 30ml Toasted sesame oil
- 9g Black & white sesame seeds

2 or 4 tbsp Butter
BBQ (or pan)

Preparation

Grill the chicken
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Place 2 tbsp butter (double for 4 portions) in a small bowl to soften.
- Pat the chicken* dry; season with ½ the sesame oil and S&P.
- Add to the BBQ (or pan) and grill, 6 to 8 min. per side, until cooked through.
- Transfer to a cutting board and let rest before slicing.

Mise en place
- Meanwhile, halve the lime; juice ½ and quarter the remaining ½.
- Remove the stems from the mushrooms. Drizzle with oil and season with S&P.
- Remove the bottom inch of the gai lan stems; halve lengthwise. Drizzle with oil and season with S&P.

Grill the vegetables
- Add the mushrooms and gai lan to the BBQ (or pan) and grill, flipping occasionally, 4 to 6 min., until tender.

Toast the sesame seeds
- Heat a small, dry pan on medium.
- Add the sesame seeds and toast, stirring occasionally, 2 to 3 min., until lightly browned and fragrant.

Make the sesame butter
- To the bowl of softened butter, add the tahini, lime juice, ginger, remaining sesame oil and S&P; stir well.

Finish & serve
- Transfer the mushrooms to a cutting board and cut into 1-inch pieces.
- Divide the sesame butter between your plates and spread out in a circular motion.
- Top with the chicken and vegetables.
- Sprinkle with the sesame seeds.
- Garnish with the lime wedges. Bon appétit!
