  • ½ Bunch of lacinato kale
  • 1 Shallot (or onion)
  • 2 Garlic cloves
  • 40g All-purpose flour
  • 15g Balsamic glaze
  • 30g Goat cheese
  • 60g Grated mozzarella
  • 454g Pizza dough
  • 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation

Mise en place

  • Preheat your Ooni to 550°F (or preheat your oven to 450°F).

  • Set the dough aside to come up to room temperature.

  • Remove the kale leaves from the stems; thinly slice crosswise. In a large bowl, toss with a drizzle of oil, ½ the spices and S&P. Massage, 1 to 2 min., until softened.

  • Peel and quarter the shallot lengthwise; drizzle with oil and season with S&P.

  • Mince the garlic.

Cook the bacon & shallot

  • Arrange the bacon and shallot in a large, oven-safe pan (or lined sheet pan).

  • Place in the Ooni and bake, 7 to 8 min., until the bacon* is cooked through and crispy and the shallot begins to soften (or, roast in the oven, turning halfway, 8 to 10 min., until the bacon* is cooked through and crispy and the shallot begins to soften).

  • Transfer the bacon to a paper towel-lined plate. Once cool enough, tear into bite-size pieces.

  • Transfer the shallot to a plate and separate into petals.

Prepare the pizzas

  • Divide the dough into 2 balls (double for 4 portions).

  • Liberally dust your work surface with ½ the flour. Roll or spread the dough out to a ½ inch thickness for a thick crust or ⅛ inch for a thin crust.

  • Dust your pizza peel with the remaining flour (or dust the back of a sheet pan) and place the dough on it.

  • Drizzle the pizzas generously with olive oil and the remaining spices. Top with the mozzarella, goat cheese, bacon and shallot.

Bake the pizzas

  • Increase the heat of your Ooni to 750°F.

  • Working one at a time, place the pizzas in your Ooni and bake, 2 to 3 min., until cooked through (or bake both at the same time in the oven, 16 to 20 min., until cooked through).

  • Top with the garlic and a handful of the kale.

  • Drizzle with the balsamic glaze.

  • Transfer to a cutting board and cut into wedges.

Plate your dish

  • Divide the pizzas between your plates.

  • Serve the remaining kale on the side. Bon appétit!
