General Tao Chicken
with Broccoli & Garlic Rice
You say Chinese food, and the family says General Tao. This Westernized restaurant staple offers bite-sized chunks of chicken with an irresistible salty-sweet sauce (the right amounts of soy, hoisin and honey see to that). It’s served with reliable pals: broccoli and aromatic rice.

- 8 Canadian-raised chicken thighs (air chilled)
- 4 Garlic cloves
- 600g Broccoli florets
- 60ml Hoisin sauce
- 320g White rice
- 40g Cornstarch
- 60ml Soy sauce (low sodium)
- 14g Honey

Preparation

Roast the broccoli
- Preheat the oven to 450°F.
- On a lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.

Cook the rice
- Meanwhile, mince the garlic.
- In a medium pot, heat a drizzle of oil on medium-high.
- Add ½ the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Cook the chicken
- Meanwhile, pat the chicken dry and cut into bite-size pieces; season with ½ the cornstarch and S&P.
- In a large, high-sided pan, heat a generous drizzle of oil on medium-high.
- Add the chicken* and cook, turning occasionally, 4 to 6 min., until browned and cooked through.

Make the sauce
- Meanwhile, in a small bowl, whisk the hoisin, soy sauce, honey, remaining cornstarch and ¼ cup water.

Coat the chicken & broccoli
- To the pan of chicken, add the remaining garlic. Cook, stirring often, 30 sec. to 1 min., until fragrant.
- Add the sauce and broccoli. If needed, thin out with ⅔ cup water.
- Cook, stirring often, 2 to 3 min., until combined and warmed through; season with freshly cracked black pepper.

Plate your dish
- Divide the rice between your plates.
- Top with the chicken and broccoli. Bon appétit!
