Level up a family classic with a few extra touches. You’ll be working aged white cheddar into fluffy mashed potatoes for tanginess, jamming butternut squash and peas into Mediterranean-spiced ground chorizo filling, and baking this homey spring dish for a golden finish.

Preparation

Make the mash

  • Preheat the oven to 450°F. Bring a medium pot of salted water to a boil.

  • Peel and medium-dice the potatoes.

  • Add to the pot of boiling water and boil, 14 to 16 min., until very tender.

  • Reserving 1 cup cooking water, drain and return to the pot.

  • Off the heat, add 4 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency.

  • Add the cheese and S&P; stir well.

  • Meanwhile, halve, peel and small-dice the onion.

Start the filling

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the onion and sauté, 1 to 2 min., until fragrant.

  • Add the beef; season with the spices and S&P.

  • Cook, breaking up the meat, 3 to 5 min., until partially cooked.

Finish the filling

  • To the pan of beef, add the squash. Cook, stirring occasionally, 2 to 3 min., until beginning to soften.

  • Add the peas, demi-glace and ½ cup water. Cook, stirring occasionally, 2 to 3 min., until slightly reduced and the beef* is cooked through.

Assemble & bake the shepherd’s pie

  • Transfer the filling to a large baking dish.

  • Spread with the mash.

  • Place on a sheet pan and bake, 12 to 14 min., until lightly browned on the edges.

  • Let stand for 5 min. before serving.
