Curly Leaf Side Salad
When a classic pasta alla vodka gets sober-curious, it’s just as delicious. We’re using white balsamic vinegar to give that twangy intensity to a rich rosée sauce. And we’re tossing in nibbles of Impossible™ beef for extra sustenance amidst a generous portion of fresh conchiglie.

- 1 Shallot (or onion)
- 3 Garlic cloves
- 1 Head of curly leaf lettuce
- 2 Cucumbers
- 30ml Tomato paste
- 225g Fresh conchiglie pasta
- 30ml White balsamic vinegar
- 60ml Heavy cream

Preparation

Cook the sausage meat
- Bring a medium pot of salted water to a boil.
- Halve, peel and mince the shallot.
- Mince the garlic.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the shallot, garlic and sausage meat*. Cook, breaking up the meat, 4 to 6 min., until golden brown and cooked through.

Boil the pasta
- Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 3 to 4 min., until al dente.
- Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Make the salad
- Meanwhile, roughly chop the lettuce.
- Thinly slice the cucumbers crosswise.
- In a large bowl, combine the vinegar, 3 tbsp oil (double for 4 portions) and S&P.
- Add the lettuce and cucumbers; toss well.

Make the sauce & combine the pasta
- To the pan, add the tomato paste. Cook, stirring often, 1 to 2 min., until dark red.
- Add the cream, reserved cooking water and S&P.
- Cook, scraping up any browned bits, 2 to 3 min., until thickened.
- Add the pasta and 2 tbsp butter (double for 4 portions).
- Cook, stirring often, 1 to 2 min., until the pasta and combined.

Plate your dish
- Divide the pasta between your bowls.
- Serve the salad on the side. Bon appétit!
