  • 1 Onion (or shallot)
  • 1 Tomato
  • 30ml Red wine vinegar
  • 30g Olives
  • 20g Breadcrumbs
  • 60g Garlic-cucumber yogurt (tzatziki or raita)
  • 60g Feta
  • 2 Pocketless pita

Preparation

Mise en place

  • Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.

  • Medium-dice the cucumber and tomato.

  • Halve and peel the onion; thinly slice ½ and mince the remaining ½.

  • In a small bowl, combine the sliced onion and cold water.

Prepare the patties

  • In a medium bowl, combine the beef, minced onion, breadcrumbs and S&P.

  • Form into 4 patties (double for 4 portions).

Grill the patties

  • Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.

Grill the pita

  • Meanwhile, drizzle the pita lightly with oil.

  • Add to the BBQ (or pan) and grill, 30 sec. to 1 min. per side, until lightly browned.

Make the salad

  • In a large bowl, whisk the vinegar, a drizzle of oil and S&P.

  • Add the cucumber, tomato, olives, sliced onion (drain before adding) and cheese; toss well.

Plate your dish

  • Divide the pita between your plates.

  • Spread with the tzaziki.

  • Top with the salad and patties. Bon appétit!
