No-Noodle Beef & Zucchini 'Lasagna' Skillet
with Bubbly Mozzarella Topping
What do you look for in lasagna? A welcoming combo of meaty filling, sheets of pasta and a cheesy topping broiled to bubbling. Switch the noodles for slices of zucchini, put it all in a skillet, and you’re on the path to carb-smart satisfaction.

- 1 Onion (or shallot)
- 2 Green zucchini
- 30ml Tomato paste
- 60g Grated mozzarella
- 7.5g Bell Pepper & Olive spices (garlic, red bell pepper, dried black olives, basil, oregano, salt, parsley, lemon, sunflower oil, black pepper)

Preparation

Prepare the zucchini
- Halve the zucchini crosswise, then thinly slice lengthwise into ⅛ inch sheets (or thinly slice crosswise into rounds).
- In a strainer, toss the zucchini with salt.
- Let sit for 10 min. then squeeze out the excess liquid and pat dry.

Mise en place
- Meanwhile, halve, peel and small-dice the onion.

Cook the beef & make the sauce
- In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high.
- Add the beef; season with the spices. Cook, breaking up the meat, 3 to 4 min., until browned.
- Add the tomato paste and onion. Cook, stirring often, 2 to 3 min., until the onion is partially softened and the beef* is cooked through.
- Add ½ cup water (double for 4 portions) and cook, covered, stirring occasionally, 2 to 3 min., until the sauce slightly thickens.

Make the zucchini 'lasagna'
- Preheat the oven to broil.
- To the pan, add 2 tbsp butter (double for 4 portions); stir well.
- Add the zucchini and S&P. Cook, stirring often, 1 to 2 min., until almost tender.
- Sprinkle with the cheese.

Broil the zucchini 'lasagna'
- Transfer the zucchini 'lasagna' to the oven and broil, 3 to 5 min., until the cheese is beginning to brown.
- Let rest for 5 min. before serving.

Plate your dish
- Divide the zucchini 'lasagna' between your plates. Bon appétit!
