For this Caribbean-inspired feast, you’re letting jerk spices warm things up for you. Ground beef patties (protein-boosted with almond flour) are in good company with a big, sunny salad of freshly cut orange and toasted almonds. Don't forget the honey-lime vinaigrette!

  • 1 Head of curly leaf lettuce
  • 1 Orange
  • 30g Almond flour
  • 25g Almonds
  • 7g Honey
  • 4g Real Jerk spices (spices, allspice, onion, herbs, cayenne pepper, garlic, cellulose fiber)

Preparation

Prepare the patties

  • In a medium bowl, combine the beef, almond flour, 1 egg (double for 4 portions), the spices and S&P.

  • Form into 6 patties (double for 4 portions).

Toast the almonds & cook the patties

  • Heat a large, dry pan on medium.

  • Add the almonds and toast, stirring occasionally, 2 to 3 min., until lightly browned and fragrant.

  • Transfer to a small bowl.

  • In the same pan, heat a drizzle of oil on medium-high.

  • Add the patties* and cook, 3 to 5 min. per side, until browned and cooked through.

Mise en place

  • Meanwhile, thinly slice the scallion crosswise.

  • Roughly chop the lettuce.

  • Medium-dice the tomato.

  • Cut off the top and bottom of the orange; cut away the peel and white pith; medium-dice.

  • Juice the lime.

Make the salad

  • In a large bowl, whisk the lime juice, honey, ½ the scallion, a drizzle of oil and S&P.

  • Add the lettuce, tomato, orange and almonds; toss well.

Plate your dish

  • Divide the salad between your bowls.

  • Top with the patties.

  • Garnish with the remaining scallion. Bon appétit!
