Grilled Middle Eastern Beef Skewers
with Chunky Muhammara
Some of our favourite Middle Eastern spices meet one of our favourite Middle Eastern dips. Ground beef picks up savoury tangy notes from sumac-based seasonings, while walnuts and roasted pepper are chopped up to make muhammara. It’s all balanced with plentiful grilled veg.
We will send you:
- 250g Canadian-raised lean ground beef
- 300g Green beans (or string peas)
- 2 Garlic cloves
- 1 Lemon
- 1 Yellow zucchini
- 1 Onion (or shallot)
- 25g Chopped walnuts
- 1 Roasted pepper
- 4 Bamboo skewers
- 8g Lovely Levant spices (sumac, sesame seeds, oregano, basil, thyme, savory, lemon zest, marjoram, kosher salt)

Preparation

Mise en place
- Heat the BBQ on high, making sure to oil the grill first.
- Place the skewers in a shallow bowl; cover with water.
- Peel and thinly slice the onion into rounds.
- Cut the zucchini crosswise into ½ inch pieces on an angle.
- Remove the stem ends of the green beans.
- Finely chop the roasted pepper.
- Mince the garlic.
- Juice the lemon.

Prepare & grill the skewers
- In a large bowl, combine the beef, ⅔ of the garlic, ½ the spices and S&P.
- Form into 4 long oval-shaped pieces (double for 4 portions).
- Drain the skewers and thread each one with the beef*; drizzle with oil.
- Add to the BBQ and grill, turning often, 6 to 8 min., until cooked through.

Grill the vegetables
- In a medium bowl, combine the green beans, zucchini, onion, a drizzle of oil, the remaining spices and S&P.
- Add to the BBQ and grill, turning often, 4 to 6 min., until tender.
- Transfer to a cutting board and roughly chop.
- In the same bowl, combine the green beans, zucchini, onion, ½ the lemon juice, a drizzle of oil and S&P.

Make the muhammara
- Meanwhile, in a small bowl, combine the roasted pepper, walnuts, remaining lemon juice and garlic, 2 tbsp oil (double for 4 portions) and S&P.

Plate your dish
- Divide the skewers and vegetables between your plates.
- Serve the muhammara on the side. Bon appétit!
