Grilled Chorizo Ćevapi
over Balkan Hummus with Warm Pita
When Balkan ćevapi meets Spanish chorizo, it’s a match made in sausage heaven. The small hand-shaped patties do great on the grill, along with summery yellow zucchini destined for a feta salad. What’s truly divine: the combo of ajvar and hummus, served with warm pita.

- 250g Canadian-raised ground chorizo pork sausage meat
- 1 Shallot (or onion)
- 2 Yellow zucchini
- 120g Hummus
- 30ml Ajvar (roasted red pepper spread)
- 30ml Apple cider vinegar
- 30g Feta
- 2 Pita

Preparation

Mise en place
- Heat the BBQ on high, making sure to oil the grill first.
- Quarter the zucchini lengthwise; halve crosswise. In a medium bowl, toss with a drizzle of oil and S&P.
- Peel and quarter the shallot. In a small bowl, toss with a drizzle of oil.
- Roughly chop the cheese.
- Prepare the ćevapi by forming the chorizo into 8 oval patties (double for 4 portions); drizzle with oil.

Grill the ćevapi
- Add the ćevapi* to the BBQ and grill, 2 to 3 min. per side, until cooked through.

Make the ajvar hummus
- Meanwhile, in a second small bowl, combine the hummus, ajvar and S&P.

Grill the vegetables
- Add the zucchini and shallot to the BBQ and grill, 2 to 3 min. per side, until tender and beginning to brown.
- Transfer to a cutting board and medium-dice.

Make the salad
- In a large bowl, combine the vinegar, cheese, 1 tbsp oil (double for 4 portions) and S&P.
- Add the vegetables; toss well.

Grill the pita & serve
- Add the pita to the BBQ and grill, 1 to 2 min., until warmed through.
- Transfer to a cutting board and cut into wedges.
- Divide the ajvar hummus between your plates and spread out in a circular motion.
- Top with the ćevapi, salad and pita. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
