Goodfood Travels: Greece’s Grilled Bifteki on Pita
with Olive, Feta & Tomato Salad
Goodfood goes global! We’re travelling the world in search of culinary inspiration, and bringing you our best finds. Next stop: Greece, where aromatic ground beef patties called bifteki go spectacularly well with a trio of traditional accompaniments: tzatziki, pita and a zingy chopped salad.
We will send you:
- 250g Canadian-raised lean ground beef
- 1 Cucumber
- 1 Tomato
- 1 Onion (or shallot)
- 20g Breadcrumbs
- 30ml Red wine vinegar
- 30g Olives
- 60g Garlic-cucumber yogurt (tzatziki or raita)
- 60g Feta
- 2 Pocketless pita

Preparation

Mise en place
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Medium-dice the cucumber and tomato.
- Halve and peel the onion; thinly slice ½ and mince the remaining ½.
- In a small bowl, combine the sliced onion and cold water.

Prepare the patties
- In a medium bowl, combine the beef, minced onion, breadcrumbs and S&P.
- Form into 4 patties (double for 4 portions).

Grill the patties
- Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.

Grill the pita
- Meanwhile, drizzle the pita lightly with oil.
- Add to the BBQ (or pan) and grill, 30 sec. to 1 min. per side, until lightly browned.

Make the salad
- In a large bowl, whisk the vinegar, a drizzle of oil and S&P.
- Add the cucumber, tomato, olives, sliced onion (drain before adding) and cheese; toss well.

Plate your dish
- Divide the pita between your plates.
- Spread with the tzaziki.
- Top with the salad and patties. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
