Foil-Grilled Maple Impossible™ Beef Meatloaves
with Sweet Potatoes & Crunchy Salad
Good things come in foil packages. Flavours of maple, whole-grain mustard and garlic are sealed in as individually portioned plant-based meatloaves sizzle on the grill. They're right at home with golden-crusted sweet potato wedges and a salad sharply edged with radishes.

- 450g Sweet potatoes
- 2 Garlic cloves
- 1 Head of lettuce
- 2 Impossible™ beef burger patties (made from plants)
- 200g Multicoloured radishes
- 30ml Apple cider vinegar
- 15ml Whole-grain mustard
- 20g Panko
- 15ml Maple syrup
- 9g Lively Garlic & Oregano spices (salt, paprika, garlic, vinegar powder, onion, red bell pepper, black pepper, canola oil, oregano, parsley, chives)

Basting brush
Oil
Parchment paper
Salt & pepper (S&P)

BBQ (or lined sheet pan)

Preparation

Roast the sweet potatoes
- Preheat the oven to 450°F. Heat the BBQ on high, making sure to oil the grill first.
- Cut the sweet potatoes lengthwise into ½ inch wedges.
- On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.
- Roast, flipping halfway, 22 to 24 min., until browned and tender.

Prepare & grill the meatloaves
- Meanwhile, in a small bowl, combine the vinegar, mustard and maple syrup.
- Mince the garlic.
- Crumble the patties.
- In a large bowl, combine the crumbled patties, panko, garlic, 1 egg (double for 4 portions), the remaining spices and S&P.
- Form into 2 small loaves (double for 4 portions). Place on a large piece of aluminum foil drizzled with oil.
- Brush the meatloaves with ½ the maple-mustard mixture. Fold the edges of the aluminum foil over to seal.
- Transfer the foil package to the BBQ and grill, rotating occasionally, 9 to 11 min., until cooked through.

Make the salad
- Meanwhile, roughly chop the lettuce.
- Thinly slice the radishes.
- In a second large bowl, combine the remaining maple-mustard mixture, 2 tbsp oil (double for 4 portions) and S&P.
- Add the lettuce and radishes; toss well.

Plate your dish
- Divide the sweet potatoes, meatloaves (slice beforehand if desired) and salad between your plates. Bon appétit!
