Buona Sera Grilled Pork Chops
over Fresh Gemelli with Red Pesto & Capers
Fresh pasta and boneless chops make easy work of a satisfying summer supper. Twists of gemelli are entwined with sun-dried tomato pesto, briny capers and sautéed veggies. Say benvenuto to tender slices of grilled pork over top, in a mere 15 minutes.

- 2 Pork chops
- 30ml Sun-dried tomato pesto
- 200g Broccoli florets
- 15ml Minced garlic
- 225g Fresh gemelli
- 150g Green peas
- 10g Capers
- 7.5g Bell Pepper & Olive spices (garlic, red bell pepper, dried black olives, basil, oregano, salt, parsley, lemon, sunflower oil, black pepper)

Preparation

Mise en place
- Heat the BBQ on high, making sure to oil the grill first.
- Bring a medium pot of salted water to a boil.
- Roughly chop the broccoli and capers.

Boil the pasta
- Add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 3 to 6 min., until al dente.
- Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.
- Reserve the pot.

Sauté the vegetables
- In the same pot, heat a drizzle of oil on medium-high.
- Add the broccoli, ½ the spices and S&P. Sauté, 4 to 6 min., until beginning to brown.
- Add the garlic and capers. Sauté, 1 to 2 min., until fragrant.

Grill the pork
- Meanwhile, pat the pork* dry; season with the remaining spices and S&P.
- Add to the BBQ and grill, 3 to 5 min. per side, until cooked through.
- Transfer to a cutting board and let rest before slicing.

Combine the pasta
- To the pot, add the pasta, peas, pesto and ½ the reserved cooking water.
- Cook, stirring often, 1 to 2 min., until combined.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
- Divide the pasta between your plates.
- Top with the pork. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
