Fresh pasta and boneless chops make easy work of a satisfying summer supper. Twists of gemelli are entwined with sun-dried tomato pesto, briny capers and sautéed veggies. Say benvenuto to tender slices of grilled pork over top, in a mere 15 minutes.

  • 15ml Minced garlic
  • 225g Fresh gemelli
  • 150g Green peas
  • 10g Capers

Preparation

Mise en place

  • Heat the BBQ on high, making sure to oil the grill first.

  • Bring a medium pot of salted water to a boil.

  • Roughly chop the broccoli and capers.

Boil the pasta

  • Add the pasta to the pot of boiling water; stir gently to separate.

  • Boil, 3 to 6 min., until al dente.

  • Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

  • Reserve the pot.

Sauté the vegetables

  • In the same pot, heat a drizzle of oil on medium-high.

  • Add the broccoli, ½ the spices and S&P. Sauté, 4 to 6 min., until beginning to brown.

  • Add the garlic and capers. Sauté, 1 to 2 min., until fragrant.

Grill the pork

  • Meanwhile, pat the pork* dry; season with the remaining spices and S&P.

  • Add to the BBQ and grill, 3 to 5 min. per side, until cooked through.

  • Transfer to a cutting board and let rest before slicing.

Combine the pasta

  • To the pot, add the pasta, peas, pesto and ½ the reserved cooking water.

  • Cook, stirring often, 1 to 2 min., until combined.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the pasta between your plates.

  • Top with the pork. Bon appétit!
